Further information:

The award of the above studentship with industrial support from Nestlé has provided an opportunity for an exciting PhD research programme into the structure-property relationships of complex fat-based suspensions (for foods) at the Institute of Particle Science and Engineering, University of Leeds. The studentship is suitable for candidates who are eligible for tuition fees at the Home rate and covers both fees and maintenance grant.

The objective of the research programme is to investigate the correlations between bulk processing (refining method & recipe) and structure (size & microstructure) on the resulting rheological, textural and sensory properties of fat-based suspensions. This project will include key developments in easy-to-use analytical techniques to characterise these complex semi-solid systems. Such understanding is vitally important to help improve product formulation for enhanced consumer perception.

The successful candidate will be required to start their PhD in October 2013. Please note; as this is a BBSRC award, it is funded for a full four years

For enquires about the project please contact Dr Timothy Hunter, Institute of Particle Science & Engineering, School of Process, Environmental and Materials Engineering, University of Leeds, via the email address: t.n.hunter@leeds.ac.uk. For enquiries tel:  0113 343 2432.
